What does RAW juice versus Pasteurised juices mean?

Have you ever bought a bottle of juice from the supermarket shelf? Maybe a bottle of OJ from the fridge section, or even a bottle of vegetable juice from the shelf. Have you ever cast your mind to wonder why the use by date is 2 years from now whereas an orange sitting on the shelf for 2 years would be a shriveled moudly remnant of its former self? Well the reason they can sit there for so long is not only preservatives, but also a process called pasteurization. Basically it was process invented by Louis Pasteur in 1864 who discovered that heating beer and wine was enough to kill the bacteria that would cause the beverages to go sour or go off. Fast forward to now, and there are a couple of methods that are used to complete the pasteurization process.

Methods include

  • Flash heat pasteurization – normally used for beverages, particularly juices, the liquid is basically cooked at high temperatures for a short amount of time.
  • High pressure pastuerisation – this is very new process and it is being used a lot in the juice world, it means the beverage is subject to pressure similar to that of the bottom of the ocean.
  • Steam pasteurization – Normally used in the processing of beef, the surfaces are exposed to high heat steam for a period of time
  • Gamma rays – primarily used in meat, it means exposing the product small amounts of irradiation.

Does pasteurization mean the produce is no longer raw? Yes. Subjecting it to any kind of processing will change the natural raw composition of the produce. Some of the traditional pastuerisation methods “cook” the produce, but other methods like the pressure method is very new and unclear yet exactly what it changes in the nutrient density. Pasteurisation is a big advantage for a food business as it means they can make more product in bulk and they know it will last, as opposed to a business like us that makes everything fresh each day. This does reduce the price of juices for the end consumer, but it also reduces the product to no better than the bottle you once picked up from the supermarket shelf.

You are only eating how many veggies??

This time of  year is when illness abounds, people start to eat comfort food and the clothing layers start to become a lot more forgiving than the old summer dress.  It becomes a lot easier to make a spaghetti bolognaise for dinner than a fresh healthy salad, which means your daily intake of veggies has gone from an abundant 4-5 serves every day during summer to 0-1 serves a day during winter.

 

But it is easy to keep your veggies up during winter, as soon as you know what a serve is.  Not only are you doing as you are told, but you are helping keeping off the winter weight by “buffering” your meal with veggies. 

 

One serve of vegetables is any of the following:

½ cup cooked green or orange vegetables (e.g. broccoli, carrot, spinach, pumpkin)

½ cup cooked, dried or canned beans, peas or lentils

1 cup of green leafy vegetables or raw salad vegetables

½ cup sweet corn

½ medium potato or other starchy vegetable (sweet potato, etc)

1 medium tomato

 

So here is how you can bump up your daily intake during winter:

  • If you are making pasta, make half pasta and cauliflower mix.  So your  sauce is still mixing with pasta, but there is some steamed cauliflower in there too.  I mix broccoli in with my quinoa, so I am having a half portion of grain instead of full portion.
  • Put a bed of baby spinach as your base for any meal.  Having chicken breast for dinner, hope about lay it on a bed of spinach.  Even a stirfry goes well on a bed of spinach. I don’t use dinner plates at home, as they are too deceptive with trying to fill up the empty space, so we eat from  largish bowls at home.  I fill the bottom of the bowl with green leafy (lettuce or spinach), and then I put my meal on top.  I am tricking myself into thinking I have this great big bowl full, so I don’t feel deprived.
  • Drink a veggie juices before dinner.  This is a sneaky little appetitie trick too.  If you have a juicer, then while making dinner you can quickly whip up a carrot, celery and beetroot juice.  Just a cup will do.  Drinking it before your dinner will help you feel fuller and eat less.

Being healthy again after holidays

With only 3 day week smack bang in between 3 public holidays, a lot of us took the chance for any easy week of chilling out and making a real holiday of it.  And I bet it was enjoyed!!

BUT, it also feels like it does at the end of Christmas holidays, that same “ I ate far too much, and drank far too much”  adage comes around again.

So what can you do about it?  One of the quickest ways to get back to your normal self is to stop drinking during the week.  Alcohol every day (hopefully just the night time) is a sure fire way to allow sneaky kilos to creep up on you.  You might think you eat quite healthy, lots of lean meats, lots of vegetables, etc.  But that one glass of wine adds 82 calories to your day, which is not a huge amount, but 1-2 each day, 7 days a week is an extra 1148 per week (which is almost one persons calorie intake for the day!)  Now I am normally not one to say that eating is all about calories, because I believe it is about nourishment.  Having said that, wine isn’t particularly nourishing, the nutritional panel for white wine is below:

Another quick easy way to redeem yourself after holidays is replace 1 meal a day with a purely vegetable meal.  So no meat, no carbs, just veggies.  The easiest way to do this is just make a really big batch of vegetable soup!  Have it for dinner each night for a week, or take it to work for lunch each day.  Here is an easy peasy recipe to try:

Throw into the oven: 3 carrots, 2 zucchinis and about 15 mushrooms, don’t use oil, just put them in a pan and roast for about 20mins on about 180 degrees.  Then in your saucepan, thrown in 2-3 cloves of garlic, one chopped onion, half a chopped celery and half a chopped up broccoli.  Saute this for about 5 mins, add in 2 litres of water with 2 vegan stock cubes (I like the Massel brand).  Take your other vegetables from the oven, chop them up, and then throw them in too.  Let it simmer for about another 10 mins. SOOOO easy!

Just the Juice - and only the Juice (well, plus some nuts)

Its Summer right now, and whilst sunny Queensland is really turning the weather on, Melbourne seems to be getting it mostly right, and Sydney seems to  need some lessons about when the sunshine should be out and about, we have been getting some requests for cleanses with just juices, and no soups.  So whilst we are happy to accomodate most requests (obviously a roast lamb and sweet potato juice is totally out of the question), we thought it might be timely to offer a cleanse program that doesn't do the soups at all.
